Do you know the history of Valentine's Day? Many think of it as a Hallmark Holiday. According to Wikipedia, "St. Valentine's Day began as a celebration of one or more early Christian saints named Valentinus.
He was imprisoned after performing wedding ceremony's for soldiers
who were forbidden to marry and for ministering to Christians, who were persecuted under the Roman Empire. During his imprisonment, he healed the daughter of his jailer, Asterius. An embellishment to this story states that before his execution he wrote her a letter signed "Your Valentine" as a farewell." Later in the high middle ages a tradition started with presenting hand written cards, flowers, and candy.

These are very easy! I used chocolate sandwich cookies with light cream cheese mixed in the food processor. Form into a ball and drop on parchment paper, chill in the freezer for 30 minutes. Then dip into melted chocolate and embellish with sprinkles.
